Don’t Hate Me Because I Love My Le Creuset!

I will warn you that these suckers are heavy—they are made of enameled cast iron—so the shoulders and the traps get a real workout having to lift them, to and fro; and it is a real chore when it comes time to clean them too. Washing these behemoths in the first place is bad enough, but in a cramped little sink is a total bummer!

We have a large collection, from small to really big, with the biggest pot, a 15-quart “Goose Pot” or “French Oven,” weighing in at 25.5 pounds. The lid alone weighs 7-pounds. Phew!

Poor Man’s Black & White Truffle Wellington Burger

This Wellington burger is made with home-ground boneless beef rib meat (one of the tastiest cuts around), and ground a second time with white truffle butter and black truffle mousse-pâté. Lastly, it is shaped, fried and wrapped in delicious, flaky puff pastry. The burger is unbelievably tender and so, so flavorful. It is absolute yumminess!

Come; take a comfortable seat at our cozy table. Dinner is served!

Recipe makes 7 1/3-pound puff pastry wrapped patties (but you can make your burger patties bigger or smaller to your personal preference).

“Really Kahlua” Kalua Pork

Since I was a small child in Managua, Nicaragua, where I was born, I have always loved pork. And though I only spent a few short years of my life there, I still carry vivid memories of my childhood foods, foods my mother took part in cooking. Like preparing a whole pig for roasting in a pit, and slow cooked all day. It began in the very early morning hours. So one day I marched into a recruiting office and proudly declared I wanted to join the Army! That day I met a woman—an extremely tall and beautiful African-American—Sergeant Noble Fields, who saw in me a “troubled child.” We made a connection, and she took me under her wing.
