The Egg Cracked

There are so many misconceptions about the egg. Is it really bad for you?

There have been so many reports stating that egg consumption isn't healthy. I realize for the vegans out there, egg consumption is not a consideration. However, I am not a vegan and do consume organic eggs. What is the truth about eggs? Are they high in cholesterol and therefore a danger?

According to the Mayo clinic, people can eat an egg daily and still be under the health guideline of less than 300 mg. a day of cholesterol. An egg has 213 mg. of cholesterol. Because most of the cholesterol is in the egg yolk, egg whites are an even better alternative. However, if you miss the yolk, go ahead and have a whole egg every now and then. Remember, our bodies actually need cholesterol to function. Obviously, if your doctor says no -- listen to him. 

There is an interesting post at ninemsn about egg consumption. They actually did a test to see if egg consumption did increase your cholesterol.  The results? Eggs did not increase the cholesterol level after eating 4 eggs a week. They also tested a body builder who consumes 18 eggs a day -- and his cholesterol level was low too!

I think you should have written the article! :) No, didn't know these things -- but I was wondering how the Easter egg coloring began. Very interesting! Thanks for your encouragement!

Jen -- Hard--boiled eggs can be kept in the fridge for 1 week. After that you better eat. After that, you don't want to be around anyone else after you eat.

Ed -- Did you know that eggs are not refrigerated in Spain? As long as you don't wash the eggs they are protected -- in America we wash the protection off and have to refrigerate. Don't know why we do that. I guess so we use up more energy in refrigeration.
